Watermelon, Pomegranate & Feta Salad

Succulent watermelon is 97% water, rich in natural sugars, potassium & Vitamin C!

Why is it good for you?
Many salad leaves, fruits and vegetables have a high water content - Watermelon is a great example as it is 97% water!
Rich in natural sugars, potassium and vitamin C it's also great for post exercise rehydration and recovery, repleneshing electrolytes lost through sweat, as well as a hefty portion of protein.
It's fast, fresh and fabulously light! Give it a go, it's easy and only takes a few minutes to prepare...

Ingredients

seeds of 1 pomegranate

100g feta cheese, sliced into small chunks

2 baby gem lettuces, sliced into ribbons
-
mixed baby leaves (lambs lettuce, watercress and spinach)

1/2 watermelon, sliced into chunks, seeds and peel removed
-
25g flat leaf parsley, roughly chopped
Dressing
-
small amount of raspberry vinegar
-
2tbsp extra virgin olive oil
-
reserved juice from the pomegranate and watermelon
-
tiny pinch of salt
-
plenty of freshly ground black pepper
Method

Briefly whisk the dressing ingredients together (add any juice left from slicing the watermelon and de-seeding the pomegranate too).

Arrange the lettuce, baby leaves, pomegranate and watermelon on a large plate or shallow salad bowl. Toss with the dressing.

Scatter with the feta and the flat leaf parsley.
